I love muffins. When I first went paleo, all I ever ate for breakfast was homemade almond and coconut flour muffins. I’ve since transitioned to more protein-rich breakfast, but sometimes I still want that muffin in the morning.
This recipe comes to the rescue. It takes 1 minute to put together and 2 minutes to cook. I can be out the door with a giant muffin in hand, and it’s high protein and full of tummy-filling fiber. You need this muffin in your life.
Materials
ramekin, bowl, or coffee mug
Measuring cup
spoon
3 Minute Apple Cranberry Breakfast Muffin [Guest Post] (Veg, GF, P, NF)
Ingredients
- 1 egg
- 1 egg white
- 2 Tablespoons coconut flour
- 1 teaspoon molasses
- 1 apple, peeled and finely diced
- 2 Tablespoons dried cranberries
- 1 pinch baking soda
- Whisk the egg and egg white.
- Mix in 2 Tablespoons coconut flour.
- Stir in 1 teaspoon molasses, 1 diced apple, 2 Tablespoons dried cranberries, and 1 pinch baking soda.
- Scoop batter into a small ramekin, bowl, or coffee mug.
- Microwave for 2 minutes.
- Let cool a few seconds and devour. Preferably with a pat of butter and a cup of organic coffee.
