3 Minute Apple Cranberry Breakfast Muffin [Guest Post] (Veg, GF, P, NF)

I love muffins. When I first went paleo, all I ever ate for breakfast was homemade almond and coconut flour muffins. I’ve since transitioned to more protein-rich breakfast, but sometimes I still want that muffin in the morning.

This recipe comes to the rescue. It takes 1 minute to put together and 2 minutes to cook. I can be out the door with a giant muffin in hand, and it’s high protein and full of tummy-filling fiber. You need this muffin in your life.



Feel free to change up this recipe with different fruits, coconut flakes, chopped nuts, chocolate chips, or maybe even some cheese and bacon for a savory muffin. The extra egg white in this recipe makes it so fluffy; it’s pretty irresistable. No excuses not to eat breakfast now!

Materials
ramekin, bowl, or coffee mug

3 Minute Apple Cranberry Breakfast Muffin [Guest Post] (Veg, GF, P, NF)

Servings: Makes one serving.
Ingredients
  • 1 egg
  • 1 egg white
  • 2 Tablespoons coconut flour
  • 1 teaspoon molasses
  • 1 apple, peeled and finely diced
  • 2 Tablespoons dried cranberries
  • 1 pinch baking soda
  1. Whisk the egg and egg white.
  2. Mix in 2 Tablespoons coconut flour.
  3. Stir in 1 teaspoon molasses, 1 diced apple, 2 Tablespoons dried cranberries, and 1 pinch baking soda.
  4. Scoop batter into a small ramekin, bowl, or coffee mug.
  5. Microwave for 2 minutes.
  6. Let cool a few seconds and devour. Preferably with a pat of butter and a cup of organic coffee.
