I know everyone is jumping on the Easter wagon right now filing your
newsfeeds and inboxes with sweet treats and great dishes to take to your
Easter feast, but sometimes you just need Chinese food!
I mean, how much ham can one person eat?
Now a chicken stir fry? Heck yeah! Add some garlic, shiitakes, and green beans and life is pretty close to perfect.
In all honesty we just don't do much for Easter anymore. This is the
first year one of the kids will be home. The last two years we kept it
simple and stayed home and dined on whatever struck our fancy.
No dying eggs, no hiding said eggs, no Easter baskets overflowing with chocolate and jelly beans.
No, just me and Chip sleeping in, taking a hike, enjoying some wine and probably grilling.
So different from the days of hiding hundreds of eggs, a feast beyond your wildest dreams and some pretty exhausted hosts!

Ginger Chicken with Shiitakes and Green Beans

2 Tbsp canola oil, divided
1 pound skinless, boneless chicken breast, cut into 1/2 inch pieces
1 1/2 Tbsp minced peeled ginger
3 garlic cloves, minced
1/4 tsp salt
9 ounces shiitake mushrooms, stemmed and caps thinly sliced
1/4 cup dry sherry
1 pkg frozen green beans
1/2 cup unsalted chicken stock
1 1/2 Tbsp low sodium soy sauce
1 1/2 Tbsp oyster sauce
2 2/3 cups cooked soba (about 4 1/4 ounces uncooked buckwheat noodles)
1. Heat a large skillet or wok over high heat. Add 1 Tbsp canola oil;
swirl to coat. Add chicken in a single layer; cook 4 minutes or until
browned, stirring after 2 minutes. Add ginger, garlic and salt; stir fry
30 seconds. remove chicken mixture to a plate.
2. Add remaining 1 Tbsp canola oil to pan; swirl to coat. Add mushrooms;
stir fry 2 minutes. Add sherry; cook 1 minute. Add green beans, chicken
stock, soy sauce, and oyster sauce; cook 3 minutes or until beans are
thoroughly heated. Add noodles and chicken to pan; cook 1 minute or
until noodles are heated and chicken is done, tossing to coat with
sauce.
