So, this weekend I finally had a break – and since I just bought a new jar of orange marmalade, I figured, why not?! Orange Marmalade Thumbprint cookies! They are light, buttery, delicious – and definitely helped with that cookie craving!
This recipe uses a basic shortbread recipe – sweet, buttery and delicious. Then, you roll the dough into balls, add a little thumbprint, then spoon orange marmalade into the wells. Bam! – throw them in the oven and 12 minutes later and you have Orange Marmalade Thumbprint cookies! So delicious!
With this recipe, it’s best to throw the dough in the fridge for 30 minutes or so, to make it easier to roll into balls. You could also just refrigerate overnight, and throw the cookies in the oven in the morning.
Also, if you are not a fan of orange marmalade, you could try another type of jam – strawberry, grape, raspberry. If anyone tries out a good flavor, let me know!
Orange Marmalade Thumbprint Cookies
Ingredients
- 1 cup (2 sticks) unsalted butter, room temperature
- 1/2 cup sugar
- 1 egg, room temperature
- 1 tsp vanilla extract
- Pinch salt
- 2 cups flour
- 3/4 cup orange marmalade
Instructions
- In a medium bowl, cream the butter and sugar together with a handheld mixer on high speed for about 3 minutes.
- Add eggs and vanilla extract to the butter mixture. Beat on medium until just combined.
- Add the flour and salt, mix until just combined.
- Place the dough in the fridge for 30 minutes and preheat the oven to 350 degrees.
- Roll the dough into balls about 1 inch in diameter. Place the balls on parchment or silpat lined cookie sheets and press down with your thumb to make a small well in the center of each cookie.
- Fill each well with 1/2 teaspoon of orange marmalade.
- Bake for 12-15 minutes or until slightly firm. Allow to cool for a few minutes on the cookie sheet to firm up before moving them to a wire rack to finish cooling.
- Serve and enjoy!
