Sweet potatoes make my my mouth and tummy happy and these “Rosemary Parmesan Sweet Potatoes” put a big fat smile on my face! I keep these orange, odd shaped, full of fiber babies in my house all the time and they always find a way into my weekly diet. And tonight they are all mine because after working a long day I didn’t feel like slaving out a meal yet I still wanted a meal with a home cooked feel. That’s when I decided Ralph’s supermarket will be in charge of making my rotisserie chicken (I delegated that job to them) and I will bang out my easy yet tasty “Rosemary Parmesan Sweet Potatoes.” It’s the perfect combination with a store bought rotisserie chicken. Yes, this bitch is quick on her toes and I let Ralph’s make my chicken! Then I banged out these “Rosemary Parmesan Sweet Potatoes” and wa-la meet my dinner. My house smells delicious and my plate taste like Thanksgiving. How can you argue with clean eating especially when it reminds you of Thanksgiving? Rosemary & Parmesan Sweet Potatoes
Rosemary & Parmesan Sweet Potatoes
Ingredients
- 2 Sweet Potatoes
- 1/2 Cup Parmesan (freshly grated)
- 1-3 Sprigs of Rosemary (removed from the sprig)
- 1-2 tbsp of Agave Syrup
- Salt to Taste.
Instructions
- Pre-Heat your oven to 350 degrees.
- Slice your sweet potatoes thin and line a baking sheet.
- Drizzle over your agave syrup.
- Add your rosemary and parmesan.
- Bake for 20-25 minutes until desired texture.
- Salt to taste.
